Warm Spinach and Sweet Potato Salad
3 cups peeled and diced sweet potatoes (400 degrees for 20-30 minutes)
1 tbsp coconut oil
1 apple diced
1 carrot shredded
6 oz of fresh baby spinach
Handful of sliced almonds for garnish
Dressing
¼ cup olive oil
1 tbsp apple cider vinegar
1 tsp dijon mustard
Fresh ground black pepper and salt to taste
