Paleo-Correct Meat Loaf

Ingredients:

2 lb extra-lean ground beef
2 red onions, finely chopped
4 garlic cloves, minced
1/2 red pepper, chopped
1/2 c fresh cilantro, chopped
1/2 c fresh parsley, chopped
2 t cumin
1 t pepper
3 eggs, beaten
2 T olive oil

Mix all ingredients in a large mixing bowl. Spread mixture evenly in an 8 1/2 x 11" baking dish. Bake at 400 degrees for 45 minutes or until well cooked. Serves 8.
